C'mon Hoser,

A little crapola is good for the garden! Yours just happens to double as a kitty litter pan! :lol: (Hey, could be worse. Our neighbor's cat chose to pee in my new boat.)

I'll have to admit, I'm not sure I'd be eager to sample your fresh veggies. Kind of loses it's appeal. Hope you wear gloves while weeding!

Hoser,
prage powder is a mixture of salt, sodium nitrate and glycerine. You can buy it from me at the shop in Ottawa. Only a small quantity is required for 10 lbs of sausage.It must be used when smoking a meat product or you risk killing yourself and your guests. If you want to kill the neighbours cat I suggest a 22cal. Save the sausage for your mother in law. :twisted: :idea:

fishhit....thanks for responding. A google search turned up zero on prage powder. does it affect the taste? How do I find you?

Hoser,
My spelling was off on the prauge powder. Its prag or praug or prauge. I'm just a meat head! It has no taste to speak of and its only function is to retard bacterial growth in the smoker where generally the temperature only reaches about 120F when cold smoking which is the standard for undried sausages. Two hours at that temperature is for bacteria what a perfect day fishing is for us.

fishhit...I see you live just down the road. Can I buy that stuff from you in CP? How much is it?

For the record, I don't have a mother-in-law....she stayed with the ex :D

The correct spelling is prague. Had to actually look at it today. Just got back from LeBarons save the tax sale where I picked up 4 bags of wood shavings for smoking and grabbed a few rapalas. Those things are like gold, they keep them behind the counter.
Our family store, Simpsons Butcher Shop is in south Ottawa. It's at the corner of Downpatrick rd and Uplands dr. one block south of Hunt Club. Feel free to drop in tues. to thurs. 8:00 to 6:00 or sat 8:00 to 5:00. We're closed sun. and mon. cause there has to be a weekend to go fishin' or sleddin' or drinkin' , oh yah, and unless I want to have an ex maybe spend some time with the wife.
Prague is dirt cheap so don't even worry about the cost, it'll be about a dollar for enough to do ten lbs.

hi everyone. i receive my great lakes angler magazine 2 weeks ago,
and their is some fish saugage photo and recipe in it the june edition,
its salmon sausage and walley sausage,they look del.......

have to try walley :)


if anyone have did it before.tell us how is it?

joco.. that walleye recipe sounds good. Why don't you post the recipe. Now all I have to do is catch some. They have had lockjaw in my lake this year so far.

HI THEHOSER

here comes the 2 recipe

walleye and wild rice sausage

2 lbs walleye ,or whitefish,or pike
1/2 cup uncooked wild rice, prepared according to package directions and
cooled..
1/2 cup heavy cream
3 tablespoons cornstarch
1 tablespoon salt
1/8 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 teaspoon mace
1 teaspoon sugar
thats it for the walleye one

salmon potato sausage

2 lbs salmon , or lake troute
3 cup peeled and diced potatoes
1/4 pound bacon, chopped
1/4 cup grated onion
1 tablespoon salt
1/4 teaspoon allspice
1/2 teaspoon pepper
1 teaspoon sugar

that it for the salmon or troute one

tel me how you like theme, if you try it.........
