Eatin' Perch - your cooking and cleaning methods

Hey Folks
Found a nice Perch hole on the Upper Rideau and have some fillets to cook up tonight.
What are your favourite cleaning and eating methods for these guys ??

Only time I've eaten perch, I gutted them and pan fried them with butter. Quite good, but I think I'd take the trouble to filet them next time, too many itty bitty bones.
