If we are talking coolest in temperature as well, I would have to say ice fishing on Prelude Lake about 2 hours outside of Yellowknife in the NWT. You could drink the water right out of the hole. The froze almost as soon as they were out of the water! Fishing at its best!

I could kick myself that Brian and I didn't try fishing on our honeymoon to Bermuda. We did snorkel a bit, though the water was pretty chilly in April. The water was crystal clear / fish species & colors were like something out of a dream...we took a glass bottom boat ride (cheesy, but the thing to do on a honeymoon) and got to see even more amazing fish.
I still love Ontario fishing better than anywhere else, and when you couple the wild scenery with wading right in, casting & connecting... well, that's just the coolest thing to me. Simple pleasures!
When I was in the military I was posted to Masset on the Queen Charlotte Islands from 1973 to 1977. Nothing has ever topped it for fishing:
sea run steel head, coho salmon, spring salmon, dolly varden and cutthroat trout, red snapper, halibut, dungeness crab, abalone, bay clams and razor clams. Oh yeah, I could go down to the dock and get a garbage bag of shrimp for $5. Doesn't get much better than that.
Any where on the Ottawa river in betwen Deep River and Campbell's bay. The river has everything you could ask for. Too me it is my favorite place to fish. Helps that you can always catch a variety of fish and lots of them aswell.

Cholla Bay Mexico---Friend has cabin there---Huge Sea Bass--Huge Grouper---Sharks--etc. Personal best is 193lb grouper---Watched Wally haul in 310 lb black sea bass---Thats his cabin record fish--for now
I forgot about the Newfoundland rivers I fished when I was young... it was ridiculous how much trout we caught. We caught our limits right a way and had to stop fishing... I was young so of course I didn't want to do that... thanks to my uncles for not trout fishing the few last weeks...it wasn't hard to convince them... they're salmon boys anyway! Ah the life of a newfoundlander!!!!
