beef liver eh?
my cousin, who is an avid catfish hunter, uses chicken liver, spleen, and just about anything else the grocery store will give him....
is there a current where your fishing?
i've always considered the big channels a light biter (or at least around here they are), so using too much weight becomes a problem...
how much weight you guys using?

Where we fish there is quit the current, either the line slackens, or the rod warps. You just need to figure out whats the current and whats a bite.
I use 2 hooks, 1 about a foot up the other about 2 feet from the sinkers. I use 2 7/8 oz sinkers. Berkley 7' med action rod with a quantium reel spooled with 10lb test stren. Bait it with a chunk of fresh liver, sit back and wait for the fiah to come. When you do get one on you're in for a awesome fight.
Best of luck to you all
