I gave a co-worker whose wife is a caterer some deer. His lunch the next day smelled so good I had to ask what is was. Turned out is was my deer. This is the marinade she put together. I've tried it since many times since and it's awesome. It is fairly powerful though.
Red Wine: 1 to 1 1/2 cups
Port: 2-3 tbsp
dijon Mustard: 1/4 cup
Garlic: 4 cloves, minced
Olive oil: 1/4 cup
Sherry Vinegar: 2 -3 tbsp
Rosmary
Thyme
Oregano
The dry ingredients, do to your taste.
Because of the vinegar, it should only marinade about 8 hours or so. I put steaks in a large freezer ziplock bag with the madinade and flip it over every time I open the fridge for something. I make it in the morning, then ready for the BBQ that night.
