Back in the old days:
Pike & Pickerel -
I did hard Corn Flakes & Rice Crispies, and then added a spice of choice garlic, pepper & salt, Jamaican Jerk....
1st a little raw egg then flour then egg again and then the hard batter mix.
Of course oil (Peanut) and voila!
Trout and Salmon - Simple Pickle or Lemon juice! Fry in butter!
Today:
Pike & Pickerel - Pancake w/a spice/s
Just battered and fried in oil!
Trout and Salmon - Simple Pickle or Lemon juice! Fry in butter!

I was just adding a reply to the ling thread, and thought it might be nice to have a thread where people submit their favourite recipes. Here are mine:
For white-fleshed fish: crushed barbecue chips. Dip the fillets in milk and egg, then coat with the crushed chips. I also use dill pickle chips with salmon and rainbow. Crushed hickory sticks are great with catfish.
For lakers, smoking is the only way they are edible, IMHO. Perch, if you can get them worm-free are great pickled.
What are your favourites?
